True, e.g. SPF, although that can be mitigated a bit it's a hassle. Plus
the headers will show where it really came from so you don't have
complete separation, which may matter depending on the reason you're
needing to send through those given SMTP servers.

All the major SMTP servers ( postfix, sendmail, etc ) have the ability
to route on a 'per domain' basis. Personally, I'd set up one local
account per remote, and then no from: address rewrites would be necessary.
Running this as an IMAP server would then allow for all remote devices
to correctly use that routing, as no modification of the remote accounts
SPF record is possible.
However, it will be a real PITA to test and maintain. I wouldn't ( don't
) do it. Mail clients are quite happy accessing multiple mail servers,
and if what you're after is a local email archive, I'd just set up
forwarding on all the relevant accounts to a local archive and leave it
at that.
