So thinking about this on a fresh brain (yay for sleep), its a big case
of it depends.

Logically the best way to do this is have a prefix statically routed to
you over some link addressing, but you also can technically use
DHCPv6-PD / RA to get the upstream router to add the correct routes /
next hops but this means that you need to run a client on your server to
do this.

However all of this is going to depend on your provider and how they
have it all configured. It might be worth having a conversation with
your provider about what they support.
