Sheilafel, The packets will go out the correct NIC, if the routing is setup properly. In the case of Internet traffic, the default route should point to your internet gateway. Then, all non-local packets will go to the gateway, which will then forward them to the correct place.
I strongly recommend getting the W. Richard Stevens book called: TCP/IP Illustrated, Vol. 1. It should be required reading for all network admins.
