Cameron,

You've got it right.  Ximian blasted your old xdm/gdm
config.  Read the section of the LTSP
manual/troubleshooting guide regarding proper configuration
of the Display Manager.  There should be something about
having a line with an asterisk in the first column for xdm.
 If you are using gdm, then you need to find the gdm.conf
file and allow remote sessions.

PS:  Don't use the term VNC (virtual network computing,
AT&T labs) to refer to an XDMCP (standard X-protocol)
connection.  It might confuse people.
