We are small and presently only have two servers running LTSP with thin clients, but we can't afford the $379 annual fee per machine running linux. What are the thoughts out there concerning the dircection we should take?

I use Debian Woody and it always work well until now and until I do the right steps.
8 clients with a host duron 800Mhz 256Mb RAM open office 1.1 works correctly
That is just what I'm doing. :-)
