just one quick thought off the cuff before going to bed: aren't there a
few open source/Linux POS systems available already? I'm almost sure
I've read about it within the last few months.

Highly interesting thing in conjunction with LTSP.

Other than that, just set it up and try it with Wine/Crossover, is the
best way to tell if the existing thing's going to work.
