I'm not anywhere near my ltsp setup now, but can't you pass a port
number to ltsp-update-kernels and that will set the kernel boot
parameters to use the correct port for the different nbd chroots?

Then as Jim said, have dhcpd instruct the client which kernel (and
thus which chroot) to use.
