I'm not in depth in Mahout at all, but I already did some similar "clean
dependencies" task on maven project. For sure depencies analysis cannot tell
the whole things and only in depth unit test and deployment allow you to
ensure that you got all that is needed.
For some libraries such as Logging you may suppose that those are provided
in the deployement environement and thus you could remove them (or set them
as "provided").

Well, I provide no clear answer, but just do it slowly and one-by-one or you
may end up with a mess.
