I don't think it will make a difference with head/earphones. however,
with speakers you can move our head around and hear form the front and
the rear, so you should hear a difference.   Say you are in a movie
theater and the sound of an airplane, starts from the left rear of the
theater , passes over head and exits the front right.  with Surround
sound, you will be able to tell where the sound is comming from bbecause
you can move your head a little.  With a set of headphones, you won't be
able to tell anything except that it went from left to right.  

(Someone said athe only stupid question is the one that should have been
asked and wasn't.)
