you've to check a file called
    .config,
containing options with which the kernel is compiled with.

IIRC, it can be found in /usr/src/linux
if you installed the kernel sources rpm.

as a side note, i recall reading somewhere that
future kernels will have the compilation options
included WITHIN the kernel, but at that time,
it wasn't included in the stable kernels yet.

maybe you can check with the kernel mailing lists,
or google for it.
