They have, it's just that they haven't been very successful. There have been a few worms which exploited vulnerabilities in Linux servers - it's just that, thanks to the wonders of Open Source openness, these vulnerabilities were patched immediately (sometimes even before the worm came out). There is also the factor that the average Linux sysadmin is a lot more savvy than a point-and-click NT sysadmin.
