To me, I will pick

Cameras:    Nikon F5 and Fm2N
Cuz, F5 is the main one to use and fm2n will be the backup.

Zoom Lens:  Nikon 20-35/2.8D and 80-200/2.8D
Cuz, I'd like to travel light for the days of walking around and hauling
the gear.  I pick only zoom mainly it allows me to compose pic ezly. 
I'll have the 20-30 on the F5 most of the time since there are just so
many awesome photo sites needs wide.  While u r trying to get the pic w/
20-30mm, u'll b forced to stand 2 ft from the person to avoid stopping
traffic (or having traffic to stop u from taking pic.)  Look out on the
perspective, though.  Cuz, a wide angle may get handsome folks look
strange.  The 80-200'll use for portrait shoots.  U've very very sharp
lense.  I'll have soft filter (Tiffen Soft FX 3) on both lens most of the
time.  So, the detail of the lady's skin won't look too apparent. 
Afterall, it's Disney.  Soften the look and make it like u r in
dreamland. :)  I'll not miss the 35-70 too much since stepping 3-5 steps
back and forward with the two lens'll cover most of those ranges(although
at diff. prespectives).  

Flash:      Nikon SB-28 and SB-22S
Cuz, sb-28'll be the main and sb-22s'll be the bkup.  sb-28 is a pwrful
and smart flash.  With 3D Multi and F5, u r not likely to get over
exposures.  sb-22 may b used for fill.  If the photo from trip means a
lot, I'll use fill.  Otherwise, it may eats up time and occupy too much
of your attention.

Tripod:     the lightest 1 u don't mind hauling around that supports the
(F5)+(80-200)+(sb28). :)  The laser show with fireworks at nite r awesome
with tripod.  Find a good place to rest the tripod in front of the man
made lake 30 min. b4 the laser/fireworks show.  It gets very crowed
early.

A note about bkups: Since fm2n and sb22s increase size and weight, bring
along a 8mm camcorder or a Pentax 160 Zoom (P&S), instead.  Better yet,
have your friend to bring and carry theirs. :)  It'll lessen your load
and free some of your mind from keep accouting on expensive gears. ;)

If u've different camera bags, I'm in flavor of waist bag (Lowpro, Tenba,
& etc.) than traditional shoulder bag.  Waist bag lighten the feel of the
load tremendously by distribute wt evenly.  (In which, it'll keep Ban-gay
away. :)  Frankly, I'll go with a dual side water proof vest (keeps rain
and sweat away) which also allows air w/o monisture passing thru (so it
doesn't get too hot) over waist bag.  However, I worned a working one in
my dreams only. :)

BTW, I'll keep my gear out of sight when I'm outside of the 'world' or
even at hotel.  Hint: have a jacket wrap over shinney stuff, name brand
lables, and attractive shapes.  There're alligators on the street. :(  I
will bring along rain coat and few plastic bags as the weather there is
not predictable.  Stands inside Disney sell yellow rain pouch for $2 last
time when I was there.  

Lastly, the most important of all, have a safe trip and a kick of your
life time.  Happy shooting.
