A couple of questions. How much memory did you start with and how much did you add. If you started with not much and added a lot, your computer could simply be going through it's start-up memory check. This can take time (several minutes depending on how much memory), even with a G3, because the cache is not enabled on a G3 until later in the boot-up cycle. The start-up memory check needs to make one complete pass to set the RAM amounts into PRAM. Once it has completed, you can turn it off by opening the memory control panel while holding down the Option and Command keys. An extra option 'Startup Memory Test' will be available. Also, did you press the CUDA button when you added the memory?
