Searching for text in a PDF is well defined, and there are a number of tools/technologies/libraries that you could use to do this.

PDF's don't work this way!
Unless the text you are going to replace is EXACTLY the same size in terms of font metics, then the rest of the PDF will be wrong. There is no concept of text reflow in PDF - so things won't "just move".
