Problem solved!!
Thanks to those who mailed me some suggestions..
Basically, if you have a wildcard domain:
+domain.com-:user:UID:GID:/var/spool/dir:-::
You use a .qmail-default in the /var/spool/dir/
If you have
=domain.com-user:user:UID:GID:/var/spool/dir:::
You use a .qmail in the /var/spool/dir/
Only took me 24 hours to work that one out :)
