here, I'll give away my secret recipe, culminated from 10+ years of pancake
making. Everyone who has practically ever stayed with me over the years have
had these. 


vegan buckwheat pancakes

1 cup organic buckwheat flour
1 cup organic unbleached white flour
2 cups water
1/4 cup olive, canola, or flax seed oil
1 tbsp baking powder
1 tbsp ground cinnamon + cardamon [the SECRET!]
1 tbsp vanilla [optional]

mix the dry ingredients first, then add the wet.
You may need to add a little extra water if it's too thick,
or extra flour or baking powder if it is too thin, or doesn't rise.

BTW. These work REALLY well in BELGIAN waffle makers, but I have had 
limited success in the 4-up wafflers.

notes:
1. I used to use vinegar + baking soda and make people in SF almost
die because they were sour. that was because I read somewhere that 
the combination would make it "egg-like". Unfortunately it is a better
solution for cakes of a greater density [like Moosewood's 6-minute
vegan chocolate / coffee cake]

2. Do not substitute the flour if you can help it. I've found that
whole wheat flour has a less appealing taste than buckwheat, and you
definitely need the mix of thin to thicker flour so the pancakes will
get that nice, lovely golden color.

3. I use a very small amount of olive oil in the pan when cooking.

4. Use a non-stick pan like a t-fal or Calpholan skillet. However,
these pans are not "macrobiotic" so you might want to investigate
other options. If you use aluminum, you're stupid for cooking with
them, because they cause Alzheimer's disease, and stainless steel,
unfortunately, sticks.


hash browns [I guess they're vegan too]

1 large russet potato per person
boiling water
sea salt, ketchup, and hot sauce to taste
potato / cheese grater [muy importante!]

Parboil the potatoes for 5-8 minutes until the exterior is somewhat
soft. They shouldn't be _very_ mushy nor stiff from a poke from a fork.

Drain the boiling water and use it for lentil soup [see below]. Rinse with
cool water and let it sit for a few minutes. Then shred, one potato per
person. The boiling makes the potatoes glutinous and now you can form them
into latkes / potato pancakes [sans eggs]. Fry with olive oil, it tastes 
the best. Use sea salt on them..


lentil soup [also vegan]

2 cups green or brown lentils
4 cups water [more or less]
3-5 cloves minced or dicec garlic
1-2 tbsp crushed red chili peppers
1-2 tbsp olive oil
1-2 tsp tumeric
1 tsp coriander or cumin
3-5 bay leaves
sea salt and black pepper to taste

Soak the lentils in the water overnight. In the morning, add some salt
and bring the lentils to a boil. Add the spices. Reduce the heat after 5-8
minutes and then simmer for 2-4 hours [depending on your patience]. Fish
out the bay leaves before eating. I use this stuff called Vegan Parmesan
Alternative [inventive name, eh?] on top and probably will add a little
more salt. Good for cold autumn lunches. mmm.


I have recipes for green curry, risottos, pasticcios, soba noodles, etc.

There are actual label copies in production but I don't think they have been
released as of yet. I still only have the white labels. It will be the same
design as the EP but with a green metallic instead of charcoal metallic ink.
A1 is "cum closer"
B1 is "i cannot"

they are merely MIXes of the same track but with no kick drum on "cum closer"
and no synth line on "i cannot".. with some added reverb and delay for both.

Not remixes. However, there will be some special treats for the album in the
works right now. I'm not entirely sure if there will be a single or two 
between it all.

Yes these are out now, but I didn't really think they were that =
limited... saw a few sitting in the bins, but white lables with stickers =

you'll have a job with record shops I'm afraid. They're all a little 
sub-standard.


The pick of the bunch is in the palace on Slater street. Can't remember the 
name, but you go inside and down into the basement, and it's a badly laid 
out second hand shop with a fair range of techno, electro & house (down the 
stairs on the right, do not whatever you do go left or you''ll find yourself 
surrounded by box sets of fantasia XXIII tapes and Sy and Dougal CDs), but 
be warned you will have to dredge through a few racks of coal to find the 
diamond. Avoid 3-beat at all costs. It'll have one or two detroit records in 
there (since sometime voodoo DJ Andy Nicholson works there and has a hand in 
the buying) but apart from that it's really quite bad. full of scallies 
listening to nasty hardcore and frankly rude staff (Andy Nich quite 
definitely excepted, light brown hair, glasses, knows his stuff and is a 
nice bloke)... I've a bit of a personal axe to grind with the shop since 
last time I was in there they tried to charge me £15 for a TLS record on 
warp (with a 7 quid sticker on it), on the basis that it was an import... 
'what, imported from f**king Sheffield?'


Probe's not exactly full of techno but I have a soft spot for it and it may 
be worth a go; just over the road from the palace. Besides it's been open 
for almost a quarter century and had a hand in the liverpool punk scene so 
you could just go for the historical interest (moved from it's original HQ 
though which was far better). And you might want to try Hairy records in 
Bold street. To my mind one of the best second hand record shops in the 
country, although again no techno (a few decent early house records if you 
search though).


and that's just about it. Sorry but the shops really are better in 
Manchester. A fiver on the coach.

To make this on topic I was sitting waiting on an oil change going through
the magazines and I notice some similarities in
terrorist fatigue and Underground Resistance, WPA.
I personally have always liked things people would find controversial like
Natzi design/ architecture, the old U.S.S.R, Stalin,
constructovism and places like Iran esthetically pleasing.
So how is UR taking all this post 9/11 "war against terrorism" political
correctness, are they trying to down play the militia
look?

(313) OT - ruined records

Seeing as its off topic week here in 313 land.

i recieved my 5 records from a shop that respect very much.
4 of them are either mispressed or ruined and therefore skip, slide and get
caught in the groove. 2 records are totally useless, while the other 2 could
never be used in a set.

i sent 2 emails in 2 days notifying them of this fact (these 4 eps are on
labels distributed by the shop) and asking them if i can get them changed.
no reply (yet, i hope).

what do you ppl suggest i do now? my dj friend says is hould just send them
back.

also the previous Counterattack releases (the "Clinamen" 12inch and "We Can 
Elude Control" 7inch) never quite got the attention they deserved imho, so 
props to Bone for picking up on them!  quality electro and techno, 
wrapped-up in some interesting concepts and ideas.


i've heard that Counterattack might be active again soon.  here's hoping!

This record collector(v rare motown/soul) I know swears by using boiling 
water. I've seen him pour boiling water on 1000GBP records before, which 
increased in value once unwarped. It seems to work but I wouldn't trust 
myself.


He puts the record on his kitchen side, boils some water and pours a 
little over. He then leaves it cool.
If you think about trying this I'd test it a few times first on records 
you're not too bothered about.

yep that's the one...the double pack i refer to is also called that.

yeah i've got that and out of the three ur related cd's that came out
recently this one is probably the most raw (in a good way tho)...

i understand the need to showcase tracks on these cds but i can't help
thinking that they'd sell more of their stuff if the tracks were used 'in
anger' so to speak like the mills and bone cds (i mean look at any of the
tracks on the liquid rooms cd...all top sellers, also that multi ordinal
tracking unit 12 must have sold 1000s due to it's outing on the subject
detroit cd :) )

It was just vinyl, on BoC's own Music70 label in 1996, something like 100 copies
and one pressing.  One of the holy grails of IDM to be sure...at least until the
repress...

really a showcase of mixing 'risks'. The DJ 3000 mix CD is a rougher but

track which is a proper string-filled classic.


Its a nice showcase CD - worth it for some of the tracks - but I way prefer 
the DJ 3000 one.

I will be in Liverpool, UK for the weekend.  I wondering what I should
see/do that's 313 related.  Any good clubs, record stores, etc?  Any help

the rolando mix towers above the others imo as well. the octave one mix
aint too shabby either but the rolando one is the one get hold of imo


speaking of octave one. the double pack that came out recently on concept
uk is really good. contains the octave one remix of inner city's 'big fun'
which is excellent, along with some other brill tracks by ksr etc


anyone heard the ksr mix cd? i heard the burden brother responsible
talking about taking risks with the mix (which most mix cds i've come
across don't really do, culprits include the recent submerge stuff and the
first octave one mix cd) so i was wondering if he does anything new on
thereaanyone?

playing it quite often for a nice butt-wriggle around the house. : )

I like Jeff Bennett's output anyway, deep sometimes dubby kinda minimal
house (I do always have probs labelling music). He's released on Phunctional
(his own label afaik), Episode, Poker Flat, Kung Fu Dub... He's from Malmö/
Sweden, and has also released some groovy choons as Mike Pung, on Maskros iirc.
Real name Michel Mirecki (?).
Also worth checking out is Falko Brocksieper's output. Smoovegrooves. : )

when I was in Melbourne a couple of years ago, I went to both Honkeytonks
and Soul'sa, and I gotta admit, both of them were off the hook.  I loved it.
I look back on those 5 days of partying that I spent there, and wish I had 5
more.  Sadly, I found out today that I am definitely not going to make it to
Melbourne this year.  Tahiti is now on the list though.  I am bummed.

Does anyone know of any good clubs in Tahiti??
