Simple, just delete the key from the structure. Extending Spike's
example:
// get mappings
factory = createObject('java','coldfusion.server.ServiceFactory');
mappings = factory.runtimeservice.getMappings();
// create new mapping
mappings['/foo'] = "c:\somepath\foo";
// remove mapping
structdelete(mappings, "/foo");
