I think each sensor can be up to about 500 feet.  So if your closets are
stacked vertically on the floors with direct connections you could probably
get by with a goose on every other floor.

yes, I run the console.  The console does 2 things for you - it provides a
single view of the status of each device, including any attached cameras.
It also allows you to push firmware updates to each device from the
console.  It does not however allow you to set parameters for all devices at
once.  For example if you want to send an email alert when temperature
exceeds 75, you have to individually configure all 16 devices.  I've put
that in as a feature enhancement request that the console be allowed to
configure attached devices.  I bet if you talk to them about that feature,
they will at least offer to write a script for you to do all the standard
configurations.
The console leaves a little to be desired, but in my opinion the devices
themselves make up for that.

the sensor wires?

I have 16 closets very spread out across the hospital so I was hoping to
have one unit in the computer room with 16 sensors communicating by ip
back to the main unit. Guess that's not how it's going to work.

I did just talk to the guys at itwatchdogs and i'm thinking a minigoose
in each closet is the only practical way to go.

Do you run their console software to manage it?

I have one of those. It does the job, but you have to rely on a server to do
all the work.

I prefer the AvTech products, but if cost is an issue, this thing will do
the job.

I've been using the tempager and room alert to monitor my server room,
remote switch cabinet and telco room. Easy to setup, good customer
