I am frequently working with directories exported (NFS) from a Linux server, and I note that there was (is?) an issue with NFS networked files. I am not sure that these are related, as the original poster of this issue does not mention NFS. This problem does not happen every time I save, but unfortunately, often enough that it makes the program virtually unusable on the Mac. I also want to note that the saves are to paths that are 'nice', i.e., not containing any confusing characters. I hope this can be resolved because I would love to use OOo on my Mac. I would also love to help in this, so please contact me if I can provide any more information.
