I can confirm the "git gui" icon problem.
A utility to create a custom icon is an ideal small project for someone

The gesture for opening the hidden launcher in Unity 7 is a four-finger
horizontal swipe (see https://wiki.ubuntu.com/Multitouch for more
gestures). This works well on all of my test hardware.

Went ahead and rendered the startup sequence of tasks, the indicators
are pretty far down the line. Perhaps we can look at when Unity8 is
sending the signal for them to start, perhaps to make it at the end of
it's init.
