Summary: Add spans to cover gaps in query processing

I think it would be good to cover the query processing + response end to end,
have minimal gaps in spans. In my original proposal for SOLR-16536 I had added
2 more: one span for query response write, and another one for the request body
handling.
Will open a PR with some examples once SOLR-16536 is in.
