I believe the bug was fixed with a recent update.
After doing the latest updates and rebooting, I can see the "r" now in the dash.

I cannot follow your steps from 2 to 3, since 3D controller will
disappear, it is not able to switch back to nvidia.
In between step 2 and 3, I have to shutdown the system first in order to
bring back nvidia controller.

I did so, now inside a chroot because the network drivers don't work
anymore. apt-get update works as expected, the output of the other
commands below:
