It can be corrected by going to tools > options > appearance > font color and changing that from the default of black to a different color. And as you are typing new text in the cell, it is black, and does not change to white until you click out of the cell, which is also a problem since you can barely see what you are typing. How to fix: Go to Tools → Options → LibreOffice → Application Colors. Adjust the Font Color or Document Background to ensure contrast.
