One way is to buy a nice cheap charger like the
Hitec range and buy AstroBob's Whattmeter and connect
them in series: The meter will show how much charge, gross,
you put in, what voltage, et cetera.

Then you coonect the Whattmeter between a load, say
something similar to the load you're gonna experience
with that pack you've been charging, and the battery.

Now you discharge with the meter in series and will
get the amps, volts, watts and mAhs. The difference
in mAhs put in and that you get out shows how inefficient
your batteries are (varies quite a bit), and how many
mAhs you can expect from a certain pack (what's printed
on them is just a guideline), at a certain load.

An advanced charger, like the Litco, Schulze, Aveox (Robbe),
or TRC will do this too, without adding external loads,
but they can't use your motor and prop to test the battery.

I have both (all bells and whistles, or simple + Whattmeter),
but prefer testing with the actual load I am going to use -
still not 100% realistic, but very nearly so!

All new expensive chargers can handle Nimhs, older destroys them!
So Check before you buy! Litco is adaptable for Nimhs, but you
can't mix, without changing settings and jumpers, I believe.

Older Robbe chargers, like the Infinity, doesn't handle Nimhs well, Sirius
does excellently, but doesn't have that much capacity, so it isn't
as fast as some. Schulze does handle both - if you have to reset
something, or not, I have no idea!
