I also think that the current behavior is somewhat unintuitive, and it
would be handy to have possibility of changing the grid size of the
current image also through "Edit -> Preferences".

I tend to agree with the OP that this is unintuitive. I'd recommend a
checkbox on the "Change Default Grid" box, marked "Update current
image?" or something along those lines.

You have only changed the default settings that are applied to new (or
newly opened) images. For images that are already opened in GIMP, you
can change this via the Image menu's Configure Grid option. See
