A few things we need to exclude/change:

* No need for the libcamera-apps{,-lite} transitional packages as we
never had them (including conflicts/replaces clauses)

* Remove d/compat; Build-Depend on debhelper-compat (and bump to =13)

* Bump standards version to 4.7.0 (no reason not to use the latest)

* In d/rules -Denable_opencv appears in $CONFIG_COMMON and
$CONFIG_{FULL,LITE} -- should probably only appear in $CONFIG_COMMON
(this should be reported upstream too)

Will have a bit more once I've finished rebuilding libcamera locally
