OK, I finally got it working...
What finally worked was:
- Define an ErrorLog at the server level
- Define the "DumpIOOUtput On" at the server level (that is clearly
stated in the manual)
- Define just one LogLevel directive, at the server level (WIPE OUT all
LogLevel directives at all of my Vi
Actually, it *is* supported.
DumpIO only logs at the DEBUG loglevel, so if the main server
error log is not setup at that level, you want see
anything. Also, it's best to enable it at
the top server level, outside of any vhosts.

Sorry, that .conf file fragment was actually inside a VirtualHost,
whereas I recall mod_dumpio directives must be at the server config. level.
Actually, if I comment those and write this right on top of my
apache2.conf file...
