If you don't use iTunes normally I suggest that you use dB power amp or EAC and rip to FLAC files .
Pick a location to store your music set it up as media source. Store music like .../artist/album/track in other words one folder for one album . To get album art have you ripper embedd it in the tracks or save it as a folder.jpg file that you store in the same folder as the album . If the ripper did not save any art then you can embed it with any tag editor like mp3tag but first you have to find the art, just google it and download and save as folder.jpg . Pick a reasonable size bigger than 500*500 is overkill on Touch, 700*700 looks nice on my iPad .
