I have never really seen a Duo put in a dock while on... but who knows? As for the hard drive space, it displays this info in the upper part of the window when you double klick (open) the hard drive. Or you could just get info? (cmd + i ) A 1 GB drive would work fine, just remember that it has to be SCSI and not IDE. I am currently using a 2GB drive in my Duo (you have to use a patched version of HD SC Setup if you are using a non-Apple drive, and remember the HFS partion size limit...).
You can actually have 32 MB of RAM in the Duo! But you have to use a 28 MB RAM card, and that is as good as it gets.... Personally, I would use 7.5.5. It is essentially the same as 7.6.1 (the latter having some more PPC optimizations, and little different interface) and will still run quite nicely on 12 MB, but fly if you max the RAM to 32 MB.
