Hi Matthew, that list is as complete as it gets. A country that participates might however not be listed if either, their participation is unsure (for whatever reason) or they simply don't have a useful website yet (but only wiki pages). If you want people to send to a list, this list is probably the most up to date one they can get.
Also, please note we have a section 'English pages' (hope that name is clear) which refers to the English summary pages of all countries that have made one. This list will most likely be most useful for people who want to upload vacation images too.
