I've used Canopy 900Mhz while mobile before. It hopped between towers quickly enough that I'd only loose a few pings....
From what I've heard of Butch's Mikrotik setup, it sounds really nifty. IIRC he used two wifi cards. One would be the data connection and the other would look for a better connection and they would switch roles as the vehicle travled. Totally blew my mind that you could script up Mikrotik to do that.
