Why do you consider that model a good drive?

This is a good model of drive to test zfs's redundancy/resiliency support. It is surely recommended for anyone who does not have the resources to simulate drive failure.

Why do you like to use mirrors instead of something like RAID-Z2 / RAID-Z3?

Because raidz3 only supports tripple redundancy but mirrors can support much more.

And how many drives do you (recommend to) use within each mirror vdev?

Ten for this model of drive.
