Chris, can I ask how this ended up working for you? If so, what shim did you use?
I've set up my Appaloosa with the Orthos and a 120mm VO single-bolt 26.0mm stem. The comfort and control is FANTASTIC, but I can make the bars slip if I push down on them hard. So far it hasn't happened while riding, but it makes me feel a little uneasy that it might be possible.
