Can someone please explain why is it that if I compile the document:
\documentclass{article}
\usepackage{fontspec,lmodern}
\usepackage[T1]{fontenc}
\begin{document}
«A»
\end{document}
what I get is
ńAż
instead of
«A» ?
Because you're using fontenc. Don't. Just let fontspec do the job.

Because you are using T1 font encoding. For xetex you should use
EU1. If you need fontenc for one or the other reason (you don't need
it in your example) load it before fontspec. Remove also the lmodern
package. fontspec already use this fonts as default.

Howdy,
Because you are mixing pdflatex and xelatex. Don't use the lmodern package (I
believe fontspec defaults to the otf version of latin modern if you don't
specify a main/roman font) and certainly don't use the fontenc package.

«A»
\end{document}
Finally, make sure you are saving the file as UTF-8.

actually loading itself. And I'm loading it to use my chess fonts.
The problem is that by loading it with the option T1 *after*
fontspec, T1 will be the active encoding at the start of the
document. If you want another encoding you must either change the
loading order or activate EU1 with \fontencoding{EU1}\selectfont.
It is like loading \usepackage[ngerman,english,russian]{babel}: The
last language loaded is active until you change it with
\selectlanguage.

If I remember correctly, I thought that there is in fact a \quote-command or
something similar in latex which will produce the correct quotation marks for
the currently active language. I remember that we had a lengthy discussion
about that once on the Dutch latex list, but I forgot the details (and I am too
lazy to go look for it ;-)) )
In this way, in French you would get guillemots, in US-English something like
`` foo , in Dutch ,, foo , and in other languages other appropriate signs.

Could that be from Philipp Lehman's csquotes package?
