Then either Cyberduck is at fault or your configuration. If you get in via ssh then you have clearly enabled the Touch's remote login feature. And the Touch definitely supports scp. For scp I use WinSCP and it throws 1-2 error messages up at login, but if I just click OK on the annoying error

Hi, Apologies if this should be in the newbies section. I am try to ssh into my Squeezebox touch (7.7.2) using Cyberduck. I get a successful connection via terminal but always get an Unexpected end of sftp stream error on using Cyberduck. setting attached (for what it's worth) - obviously

I'm not familiar with Cyberduck, but as far as I know the Touch does not support SFTP. It does support ssh and scp protocols. So if Cyberduck has scp support, try that. Or go into the Touch via terminal and ssh, and then use the scp command.
