if you're on OSX there's an extrememly handy app called Audio Hijack which will record the output from any software. it comes with several built in DSP tools AND is VST compatible. works great for RA streams.

I was wondering if anyone out there could advise me how to convert
streaming
media to mp3/wav format. There's quite a lot of mixes online which I
would
love to be able to convert but they only allow for streaming only.

I have two computers at home, so I connect the first to my mixer and the outputs of the mixer to the second computer. That´s how I record all those
demf mixes ;)

I think it is not easy to achieve this without having two computers...

Cheers,
Maarten
