Welp, just call for help and you find a way to help yourself.

I was only looking in the cockpit-webinterface for an option. I just found out that there is a configuration parameter I can set with dsconf in the cli called nsslapd-{access,error,…}log-mode= where I can do the exact thing I want to do.
