Not exactly a bug. Since Gregorian chant never involves multiple
voices, or any kind of harmony, it's more a case of undefined
behaviour. I'm kind of surprised that you still get treble clefs,
and beams and slurs also come out correct.
You can also get square note heads (if you really want) with any
abc, by setting the number of segments used to draw the note heads
to four in the viewer preferences, and fiddling with the handles to
get a square.
