As far as I know, you can't. It's hardwired in. However, you *can* create an empty document with Normal defined to use a different font, and open that to start your new documents. (At least, I think you can. I have a couple of files along those lines, but they all have a bit of text in.) Essentially, this is waiting for templates to be properly implemented, but I think that's going to be post-1.0.
