We've replaced all the accessible cables (machine to wall, switch to
port), and even the plug plates that the cables plug into in the wall
and the closet ports.  I seriously doubt it's a wall cable, as it never
moves and there hasn't been any construction on that floor.

Is it possible you have a flaky cable or connection? We saw something 
like this somewhere, I forget where, where the traffic was triggering 
errors like that and a cable was bad.
