In my understanding, using a mailto: link is perfectly fine.
The link text should be descriptive, i.e. make clear what happens when
the user follows the link - which is helpful for people not relying on
assistive technology as well.
There's no need to have the link text be the same as the target, so I
wouldn't use (3). I think, both (1) and (2) should be fine.
(2) would in my opinion be a bit more straight-forward because for (1),
a link might alternatively e.g. also point to a website saying more
about Patrick Durusau instead of allowing to write him an email.
However, screen readers usually also have a way to give more details on
the currently focused object (like a link), and e.g. Orca's "Where am I"
command would say something like "mailto link, email link" when used
while a mailto link is currently focused, regardless of the link text.
Having a link text like "Write an email to Patrick Durusau" might be yet
another alternative.
I'm not an expert on those, but the Web Content Accessibility Guidelines
(WCAG) and the corresponding "Understanding" docs give more details on
how to make web content accessible.
