Great that you are organising such a training.Dont only concentrate on use 
of cutlery but also look at how a VI should be introduced and how he should 
intoduce others, how to walk into a room and how to stand. All etiquette 
classes do a module on these preliminary matters. Also there is a list of 
words which are wrongly pronounced so you need to go through this list.Also 
while doing the food section it is important to know how to hold the glass.
Ask your trainer to do all she does with others but only tailor her 
explanation to the needs of the VI.

Dont have more than 20 participants.
