If I understand correctly you wish to switch from ordinary text to predictive text while typing a message. Press the hash key (generally to the right of 0) to switch between upper case, lower case, all capitals, dictionary lower case, dictionary upper case and numbers. You can also select Activate Predictive Text from the menu that appears by pressing the star key (generally to the left of 0). When you switch predictive text on, Talks announces dictionary words for the letters you type.
