Yes, sight is given an undue prominence in dreaming/waking life. Dreams try to recreate impressions of world as it is experienced, sensed and perceived, in different permutations and combinations. dreams fulfill many functions and are related to brainactivity during sleep. Actually recently it has been found that more or less same brain areas are involved in waking and dreaming experience. In Dreams we experience the same impulses sans sensory data. So, as a rule, dreams cannot make you experience a sense which you have not experienced in waking life.
But you can experience all the other senses with all their weird combinations in dreams as well without actual external sensory impulses to trigger such experience. However, according to at least one exchange of thoughts, the quality of visual perception experienced in dreams is far richer and enchanting than that of actual waking experience, I cannot say the same about quality of auditory/tactual sense which I experience in dreams as it is not too different from waking one. I am not a dream expert, but from what I know of, psychological researches are largely responsible for creating the impression that dreams are mostly visually oriented. People eat, sing, read, have sexual experience etc etc in their dream and not all of them are based on visual experience alone. I guess that it answers your second question as well.
