The type of server is going to be of great importance. If you are planning to do this with a Domain Controller - just don't. It's not worth the trouble, and is technically not a sound practice.
If you are talking about a member server, are you thinking of imaging just the base build and then applying a restore over that for the data? As to some of the specifics you ask for Ghost.... I dunno. I don't use it, so I can't answer the questions about DHCP for Ghost, or a 'cast server'. Maybe others can help on some of the other specifics.
