...??  You already answered this question yourself just two days ago a 
couple of items up in this thread?

As you already said you just override the field so that it's not 
editable.  Obviously someone can still post values if they construct the 
post manually so you might want to add some logic to the various 
callbacks to check passed in values (or you could achieve all the above 
by using a virtual column which is read-only - basically the same idea 
though)
