you're right. I've tested and something looks wrong there. Options are
being passed as html attributes instead of javascript config.
Luckyly, for this case, there's an easy way around this. You can use your
locale:

en.yml (or whatever lang you're using)

date:
  formats:
    default: "%d/%M/%yy"

or if you use datetime_picker:

date:
  formats:
    picker: "%e/%b/%Y"
