you could just grab a pure:dyne or Ubuntu Studio LiveCD, it comes with a heap of
audio software ready to go:

LiveCD's:

to echo Sonja, i've used Ardour for a five or six years on Linux and these days
it's pretty solid, akin to Pro Tools i suppose (even edited an album using it
when it was still a little flaky). i haven't made any audio on a Macintosh or
Windows machine for a good 10 years so i don't know what the state of play is.

anyway, musicians on Linux will often use:

        http://download.renoise.com/
        http://www.filter24.org/seq24/
        http://www.rosegardenmusic.com/
        http://www.muse-sequencer.org/wiki/index.php/Aeolus
        http://puredata.info
        http://lmms.sourceforge.net/
        http://smack.berlios.de/
        http://www.nekosynth.co.uk/

perhaps some of these apps have been ported to OS X.

cheers,
