Is this two questions or one?  For archiving data on a BD you could
use rar or zip files, 7-zip is free and will do a great job of
breaking large data into the 25 gigabyte files that a BD-R can hold.

To span large AVI files across multiple BD discs:  I'd use a bitrate
calculator to calculate the maximum video length to fit onto a 25
gigabyte BD-R and then break the video into those chunks:
