The layer break is where the data on the disc changes to the upper layer. 
Typically it's put right at halfway in video but you can move it to a scene 
break where it won't be as obvious on players that don't handle layer breaks 
too well.

As for dual layer media, stay away from Maxell brand discs! They are very 
incompatible with many burners and players. I burned a bunch of them and out of 
all the burners and players I have, only the drive that burned them and one 
other burner can read them. Maxell's single layer discs are good. I bought a 
bunch of their dual layer discs on sale at Staples, the only brand of dual 
layer DVD Staples has ever had in more than an overpriced 3 or 5 pack and 
they're junk!

Another one to steer clear of is Hewlett Packard 2.4x dual layer. You may find 
some dirt cheap on clearance or surplus. Those have about a 50% failure rate. 
Quite irritating to wait for the slow discs to finish burning, only to have 
them fail verification, or even crap out in the middle of burning. Same bad 
performance in 5 different brands and models of burner.

If you want to try various dual layer discs without getting burned on price, 
check Americal.com I should buy a spindle of printable dual layer DVD+R from 
them, can't be any worse than the Maxell ones.

As for which type, + or -, Most of what you'll find is DVD+R Double Layer. 
DVD-R Dual Layer (yup, they use different words for the same thing) is 
uncommon, for some reason manufacturers don't make the - type in large quantity 
or in faster recording speeds.

Two things next to vaporware in DVD media, double layer rewritable and DVD+RW 
and DVD-RW in speeds faster than 4x. DVD+RW Double Layer was announced in 2006, 
where's the blank media? As for rewriteable DVD faster than 4x, you'll have to 
go hunting online because brick and mortar stores won't put them on their 
shelves, same as they rarely have any write once dual/double layer media.
